A nutrition expert has highlighted a nutritious breakfast that can be easily prepared the night before work. Emily English, aged 29, emphasized the importance of starting the day with a healthy meal and recommended her ‘butterbean shakshuka egg pots’ as a great breakfast option.
Taking to Instagram, Emily shared the recipe for her protein and fiber-rich dish, explaining its benefits for weight management, digestive health, and overall well-being. She described the dish as a satisfying and energizing choice that can keep you full until lunchtime without any energy slumps.
In her cooking demonstration, Emily sautéed onions and peppers with a dash of salt before adding garlic, harissa paste, and tomato paste to the pan. Tinned cherry tomatoes and drained butterbeans were then added to create a thick and flavorful mixture. Boiled eggs, fresh dill, and feta cheese were used to top the bean mix in individual containers, making them ready to eat.
Emily recommended enjoying the meal either hot or cold, with the option to reheat it in the microwave if desired. She also shared a tip for reheating by cutting the egg into quarters to prevent any explosions in the microwave. Highlighting the benefits of eggs for breakfast, nutritionist Helen Bell from UK Care Guide emphasized the role of eggs in weight loss due to their high protein content, which helps increase satiety and reduce overall calorie intake throughout the day.
Bell advised on the importance of portion control and healthy preparation methods to avoid unnecessary fats. She also stressed the benefits of consuming “clean foods” like chicken, fish, fruits, vegetables, nuts, and seeds for weight loss, noting their lower calorie content and higher essential nutrient content compared to processed foods. These foods provide fiber for digestion and help maintain a feeling of fullness.
